Sushi Chef

**Sushi DoZo (part of laziz group)** is seeking a passionate and motivated **Sushi Chef** with experience in **sushi preparation and cold\&hot kitchen operations**. The ideal candidate will assist in preparing high\-quality Japanese dishes while maintaining food safety, hygiene, and presentation standards. Key Responsibilities * Prepare sushi, maki rolls, nigiri, sashimi, and other cold Japanese dishes as per company recipes. * Assist in the preparation of salads, appetizers, and other cold\&hot kitchen items. * Ensure all ingredients are fresh, properly stored, and prepared according to food safety standards. * Maintain consistency in food quality, portioning, and presentation. * Prepare and organize mise en place before service. * Monitor stock levels and report shortages to the Chef or Kitchen Supervisor. * Maintain cleanliness and hygiene of the sushi station and cold kitchen at all times. * Follow HACCP, municipality regulations, and company food safety procedures. * Minimize food wastage and handle ingredients efficiently. * Support the kitchen team during busy service periods and perform other duties as assigned. Qualifications * High school education or equivalent. * Certificate or training in Culinary Arts is an advantage. * 1–3 years of experience in a Japanese restaurant, with hands\-on experience in sushi and cold\&hot kitchen preparation. * Basic knowledge of Japanese ingredients, knife skills, and food presentation. * Knowledge of food safety and hygiene standards. * Experience in the UAE/GCC is preferred is mandatory.
