* **Position:** Head Baker * **Workplace:** Central Kitchen (High\-volume, multi\-unit production facility) * **Reports To:** Executive Chef / Kitchen Operations Manager **Key Responsibilities** * **Production Management:** Oversee daily baking schedules, mixing, proofing, and baking operations to meet large\-scale output demands. * **Quality \& Consistency:** Maintain strict quality control and follow standardized recipes so products match across all destination outlets. * **Staff Leadership:** Train, mentor, and supervise assistant bakers and kitchen helpers. * **Inventory \& Cost Control:** Monitor stock levels, manage ingredient orders, and minimize waste to maintain profitability. * **Safety \& Sanitation:** Enforce strict hygiene standards, including HACCP compliance, equipment cleanliness, and safe operation of industrial mixers and ovens. * **Recipe Development:** Test and scale new bread and pastry recipes suited for centralized production and packaging. **Requirements \& Qualifications** * **Experience:** Minimum 3 to 5 years of professional baking experience, with prior leadership or supervisory history in a high\-volume kitchen. * **Technical Skills:** Deep knowledge of fermentation, artisan bread\-making, and large\-scale oven/proofer operation. * **Physical Stamina:** Ability to stand for long shifts and lift heavy ingredients (e.g., 50lb flour bags). * **Certifications:** Valid food safety and hygiene certification (HACCP trained).
