F&B Cost Controller and Purchase

* Manage the complete purchasing process for food, beverage, operating supplies, equipment, and other restaurant requirements. * Obtain and compare quotations from approved suppliers to ensure competitive pricing. * Prepare purchase orders based on approved purchase requisitions. * Coordinate with suppliers regarding prices, availability, delivery schedules, and payment terms. * Monitor and control food, beverage, and operating costs against approved budgets. * Calculate and monitor Food Cost %, Beverage Cost %, and overall Cost of Sales. * Analyse actual costs against budget and previous periods and report significant variances. * Monitor portion control, recipe costing, wastage, complimentary items, discounts, voids, and staff meals.
