COOK / SUSHI CHEF

* Prepare sushi, sashimi, nigiri, maki rolls, and other Japanese dishes according to recipes and quality standards. * Select, inspect, and prepare fresh fish, seafood, vegetables, and other ingredients. * Slice fish and other ingredients with precision using proper knife techniques. * Cook and season sushi rice to the correct consistency and flavour. * Ensure all food is prepared, plated, and presented attractively and consistently. * Maintain high standards of food safety, sanitation, and hygiene in accordance with health regulations. * Monitor the freshness and quality of ingredients, rotating stock using FIFO (First In, First Out). * Manage inventory, order supplies, and minimise food waste. * Store seafood and perishable ingredients at appropriate temperatures. * Clean and sanitise kitchen equipment, utensils, and workstations. * Collaborate with kitchen staff to ensure smooth and efficient service during busy periods. * Assist in developing new sushi items and seasonal menu offerings. * Train and mentor junior chefs and kitchen assistants on sushi preparation techniques. * Ensure customer dietary requirements and allergy requests are handled safely. * Follow standard operating procedures and maintain consistency in food quality. * Monitor portion sizes to control food costs without compromising quality. * Inspect deliveries to ensure ingredients meet quality and freshness standards. * Maintain a clean, organised, and safe work environment. * Support the Head Chef in achieving operational and customer satisfaction goals.
